Few aromas evoke more than cinnamon. The scent of freshly baked cinnamon cookies is undeniably homey. Zimtsterne are among my top picks for holiday cookies, and Christmas wouldn’t feel the same without them.

This recipe is incredibly simple and requires only a handful of basic ingredients. The cookies mainly consist of ground almonds and, naturally, cinnamon. If you haven’t sampled them yet, this will undoubtedly become a favorite. Once completely cooled, store them in a sealed container for up to two weeks.

Dough Ingredients

  • 500 grams ground almonds
  • 300g powdered sugar
  • 2 teaspoons cinnamon
  • 2 egg whites
  • 1 teaspoon eggnog
  • 1 teaspoon almond extract (optional)

Icing Ingredients

  • 125g powdered sugar
  • 1 egg white

Recommendations

Dip the cookie cutter in powdered sugar after cutting each cookie. This ensures the dough doesn’t adhere to the cutter.

Method

  1. Preheat the oven to 150°C or Gas Mark 2
  2. Combine all dough ingredients using a mixer
  3. Shape the mixture into a smooth ball by hand
  4. Divide the dough into three parts
  5. Roll each part to about 1cm thick, using powdered sugar instead of flour
  6. Cut out stars with a star-shaped cookie cutter and place them on a baking tray lined with parchment paper
  7. Beat 1 egg white until stiff and gradually incorporate the powdered sugar, continuing to mix until firm
  8. Apply a thin layer of icing to each cookie
  9. Bake on the lower rack for 10-15 minutes (Baking time varies by oven). The icing should set but not brown.
  10. Once completely cool, store the cookies in an airtight container for up to two weeks.
