Baking cookies during the holiday season is a family custom I hold dear. Even though we've transitioned to a Keto diet, I didn't want to abandon this cherished ritual. Although many perceive the Keto diet as very limiting, it becomes quite manageable once you understand the guidelines. Initially, swapping almond or coconut flour for wheat flour and sweetener for sugar can be a bit daunting, but it soon becomes straightforward after a few attempts. Transforming an old favorite into these keto holiday cookies was quite easy.

These roll-out holiday cookies have always been beloved in my household, and the tradition of baking during the festive season is as integral to our festivities as Christmas arts and crafts! My children especially would never let a Christmas pass without the opportunity to adorn some cookies. And I can't blame them – decorating cookies is incredibly enjoyable! Rest assured, even the icing adheres to the keto guidelines!

Keto Christmas Cookies – Ingredients

Cookies

  • 1 Cup Butter (softened) – 0g Net Carbs
  • 1 Cup Preferred Sweetener (I recommend Swerve Confectioners or Granulated Erythritol) – 0g Net Carbs
  • 3 Cups Almond Flour – 18g Net Carbs
  • 1 Tbsp Vanilla Extract – 0.3g Net Carbs
  • 1 Egg – 1g Net Carbs
  • 2 Tsp Baking Powder – 2.6g Net Carbs

Icing

  • Swerve Confectioners – 1 Cup per decorative color – 0g Net Carbs
  • Heavy Whipping Cream – 2-3 Tbsps. per decorative color – 0.4g Net Carbs per Tbsp
  • Optional – Vanilla/Peppermint or other flavorings – 0.1g Net Carbs per Tsp

Recipe Yields – Approximately 20 Cookies, depending on the size of the cookie cutter.

Net Carbs per Cookie (assuming 20 cookies, adjust the calculations as necessary) – Roughly 1.12g Net Carbs

Keto Christmas Cookies – Instructions

  1. Cream together your softened butter and sugar substitute using a fork or hand mixer. If you forget to soften the butter beforehand, you can microwave it for about 30 seconds. Mix until fully combined; depending on the sweetener used, you may not get the fluffy butter consistency you're accustomed to, but that's fine. It will turn out well in the end.
  2. Add the egg, baking powder, and vanilla extract. Mix until thoroughly combined. Your dough will be quite wet at this stage.
  3. Gradually incorporate the almond flour, one cup at a time, until the dough takes on a crumbly texture. The dough should appear crumbly but still be moist enough to stick together when pressed.
  4. Shape the dough into a ball, wrap it in plastic wrap, and chill in the refrigerator for at least 30 minutes.
  5. After chilling, roll out the dough between two pieces of parchment paper. Keeping the dough about 1/4-inch thick works well, though you can make it thicker if you prefer softer cookies.
  6. Cut the dough with cookie cutters into desired shapes. Use a spatula to transfer the cut shapes onto the baking tray. If the dough becomes too soft and breaks, re-chill it in the refrigerator. The dough is easier to manage when cold.
  7. Bake the cookies at 400 degrees for 6-10 minutes. Allow them to cool completely before adding the icing.
  8. While the cookies are cooling, prepare the icing. Use approximately 1 cup of Swerve Confectioners for each color.
  9. Incorporate the flavoring extract if desired.
  10. Add the Heavy Whipping Cream one tablespoon at a time, mixing thoroughly after each addition, until the icing reaches the consistency you prefer. For a thinner icing, add more cream; for a thicker one, use less.
  11. If using food coloring, gel colors are preferable to avoid thinning the icing, although liquid colors are also acceptable. You may need to add additional Swerve to thicken the icing if using liquid colors.
  12. Utilize a piping bag with a small tip (or a sandwich bag with a corner cut off) to decorate the cookies. Alternatively, you can coat the cookies using a spoon or even dip them if you prefer.
  13. Serve and savor!
